BORDEAUX

LOIRE
The wines of Coteaux du Layon are interesting dinner and after-dinner wines. When they are young, their acidfruit balances make the wines enjoyable with dinner. As the wines mature, the fruit continues to come forward. Quarts (pronounced CAR) de Chaume is lemony, with sweet acidity, and goes well with light desserts

Spatlese (SHPAYTE-lay-zeh) is sweet to barely sweet. Auslese (OUSE-lay-zeh) is sweeter, 'drinking sweet.' Beerenauslese (BEERN-ouse-lay-zeh) is much sweeter and is usually sipped, rather than drunk, by the glass. Trocken-beerenauslese (TRAW-ken-BEERN-OUSElay-zeh) is de finitely 'sipping wine' as is Eiswein (ICE-wine) — very sweet
-
AUSLESE (BOTTLE)
(OUSE-lay-zeh) comes from selected picked grapes that are allowed to stay on the vine longer to obtain more sugar. The resulting wine is a little sweet to the taste

TROCKENBEERENAUSLESE
(TRAW-ken-BEERN-ouse-lay-zeh) The sweetest most difficult to make of all the great German dessert wines. The grapes are left on the vines until they look like raisins and then picked grape by grape. The grapes then contain a very high degree of sugar. Some estates only make this wine about once every 10 years

The three varieties of Tokaji are Szamarodni, the white table wine that can be either dry or sweet; Aszu, which can be mildly sweet (3 puttonyos) to very sweet (6 puttonyos); and Essencia, 'essence,' the spectacular dessert wine that is both extremely sweet, extremely scarce and extremely expensive to make, and — of course — extremely expensive

PORTUGAL - MADEIRA
When our Declaration of Independence was signed in 1776 the document was toasted not with Bordeaux or Burgundy, but with Madeira. Madeira was the beverage of choice of many of the world's connoisseurs during the 18th and 19th centuries but diseases and pests devastated the island in the late 19th century almost ending the production of fine Madeira. If you wanted to taste the best 150- or 200-year-old table wine (perhaps an 1832 Lafite Rothschild, for example), you would pay from $5,000 to $40,000 for the bottle and once you opened the bottle, you would have to drink it quickly before it faded away. On the other hand, you can enjoy a sip from a bottle of fine after-dinner Madeira a day for a year and the wine will be just as tasty the last sip as the first — and you would probably find more flavor in the Madeira. Unlike table wines, the older 'sipping wines' like Madeiras get, the richer they become

MUSCAT (BOTTLE)
Among the least known dessert wines of the world are the Muscatel de Setubals (pronounced se TOO bal) of Portugal. Grown and made in sandy soils fit almost only forcactus, these wines improve with age for a hundred years and more, becoming dark red, mellow, and elegant. They seem to lead dual lives. When young, they have strong acidity and medium fruit, and make nice table wines. But because they are high in alcohol, they take a long time to age, and become sweeter, fruitier, and fuller as they get older. The best (and oldest) are indeed very good
J.t. Pinto Vasconcello 1969 Moscatel de Setubal

PORT
If you purchase a glass of any port listed here, it will be enjoyable now; because chances are that the bottle has already been opened and had time to breath (softened, matured, smoothed out). If you purchase a bottle of Vintage Port, the younger vintages need time to breath. Either pour a larger quantity in each glass and swirl the glass between sips, or have us decant the bottle first, and then pour and swirl. The older vintage ports will probably be ready to enjoy. Late Bottled Vintage (LBV), Tawny, or Reserve need not be aired — they are ready to enjoy when opened. They are dryer, or less sweet and have a light Cognac character from their longer aging in wood. The best (and oldest) are remarkable experiences — they can be magni ficent!

WHITE PORT (1.5OZ POUR)
White Ports are made from white grapes only. Can either be dry or slightly sweet

-
RUBY PORT (1.5OZ POUR)
Ruby Ports spend the least amount of time in wood. They are filtered just prior to bottling so they do not have to be decanted. The maker strives to make every bottle exactly the same year after year. It is the most popular Port in France because of its fruitiness and easy drinkability

OTHER PORT STYLES
There are various other styles of Port –Colheitas are from a single vintage and may have spent 20 to 50 years in cask. Reserves usually reflect the maker's style and are consistent from year to year. LBV represent excellent values as they are made in a similar manner as Vintage Ports but from a vintage not quite as profound as a Vintage Port

VINTAGE PORT (1.5OZ POUR)
Vintage Ports offer the most complex flavors. They are sweet, rich and possess an aftertaste that lingers on your palate. They usually require at least fifteen years to mature. Older vintage ports must be decanted to remove the sediment. Quinta means farm in Portuguese. Single Quinta's come from the best vineyard or farm, from that producer. They are usually made in non-vintage years

SHERRY (1.5OZ POUR)
Sherries are blends of wines that have been uniquely 'made' in soleras (huge groups of sherryfilled barrels ranging in age from a couple of years old to two hundred or more years old). Flavors vary with grapes used and company styles. Some dessert sherries are sweet and creamy; some will be medium sweet (or 'sweet-dry') like some oloroso sherries. All have some of the sherry character of mellow nuttiness that comes from the soleras
